Beet Poke Bowl

You’ll need:

  • 2 tbsp tamari

  • 1 tbsp tahini or miso paste

  • 2 garlic cloves, minced

  • 1/4 tsp ground ginger

  • 1/2 tsp sesame seeds

  • 3/4 tsp sesame oil

  • 2 cups steamed beets, peeled and cubed

  • 1 packet wild-caught tuna, optional

  • 1 cup shelled edamame, cooked and cooled

  • 1 avocado, cubed

  • 1 cup cooked white rice

  • 2 cups dark leafy greens

  • Optional, to serve:

    • shredded cabbage

    • green onions

    • cilantro

    • furikake

    • kimchi


marinate the beets:

whisk together tamari, tahini or miso, minced garlic, ginger, sesame seeds, and oil in a large bowl.

Add the beets to the dressing, toss to coat and let sit for 10 minutes to marinate.

build the bowls:

divide rice and greens between two bowls, topping with marinated beets, tuna, if using, edamame, avocado and desired garnishes.
