Breakfast Tacos

You’ll need:

  • 3-4 mini corn tortillas

  • 1 tbsp butter or avocado oil

  • 3 eggs

  • 1/2 cup black beans

  • 2 green onions, thinly sliced

  • 1/2 avocado, sliced

  • shredded cheese, optional for serving

  • hot sauce, optional for serving


Preheat your oven to 350 and heat a medium skillet over medium-high heat. While heating, whisk the eggs in a small bowl to scramble.

When heated, reduce heat to medium and add the butter. When butter is fully melted, pour in the eggs, using a spatula to scramble as the bottom begins to cook.

While eggs are cooking place your tortillas in the oven to warm.

As eggs finish cooking, add in the black beans to heat through.

Remove tortillas from oven and evenly distribute the egg and black bean mixture between them. Top with green onions, cheese, and hot sauce as desired.
