Chopped Salad

You’ll need:

  • 1 cucumber, semi-peeled and diced

  • 1 green bell pepper, diced

  • 1 pint cherry tomatoes, quartered

  • ½ red onion, sliced thin

  • 5-6 radishes, diced

  • 5-6 pepperoncini, sliced 

  • 2 tbsp kalamata olives, chopped

  • 4 slices salami or pepperoni, diced

  • Feta cheese, crumbled

  • 2 tbsp red wine vinegar

  • 2 tsp dried oregano

  • Salt and pepper to taste

  • Extra virgin olive oil


Prepare the salad:

  1. Combine salad ingredients, cucumber to salami, in a large bowl

  2. Season to taste with oregano, salt and pepper

  3. Coat salad with olive oil; start with 2 tbsp, mix it in and add more if needed

  4. Add red wine vinegar and stir to combine

  5. Top with crumbled feta cheese

Leftovers will keep in the fridge until the next day.
