Chorizo Stuffed Quesadillas

You’ll need:

  • 1 tbsp avocado oil

  • 1 lb. chorizo 

  • 3-4 mini sweet bell peppers, thinly sliced

  • 6 organic flour tortillas

  • 2 tbsp ghee (sub butter or avocado oil)

  • 3 cups shredded cheese of choice (i used a 4 cheese mexican blend)


Prepare the quesadillas:

  1. Preheat the oven to 200* F. 

  2. Heat a large skillet over medium heat, adding 1 tbsp of avocado oil. 

  3. When the oil shimmers, add the chorizo. 

  4. Brown the chorizo, breaking it up into smaller pieces with a wooden spoon. 

  5. When the chorizo is mostly cooked, add in the sliced mini sweet bell peppers. 

  6. Meanwhile, heat a separate frying pan (slightly larger than your tortillas) over medium heat, adding ½ tbsp of ghee to coat the pan.

  7. Place a single tortilla in the middle of the pan and spread a thin layer of shredded cheese in the center, leaving a small border around the edge. 

  8. Place a lid over the pan to keep the heat in and melt the cheese. 

  9. When the cheese gets gooey, scoop about a ¼ cup of the chorizo bell pepper mixture onto one side of the tortilla, top with a handful of cheese, and return the lid to the pan. 

  10. When the rest of the cheese starts to melt, use a metal spatula to gently fold the cheese-only side over the chorizo side. 

  11. Allow the cheese to melt for a few more seconds then transfer to an oven safe dish and place in the preheated oven to keep warm and continue melting the cheese. 

  12. Repeat steps 7-11 with remaining ingredients.

Best served with smashed avocado and fresh pico de gallo. 

*I placed a paper towel under the quesadillas while they warmed in the oven to soak up any excess ghee and keep them crispy!
