meal prep?
yes
You’ll need:
1 tbsp avocado oil
1 lb. chorizo
3-4 mini sweet bell peppers, thinly sliced
6 organic flour tortillas
2 tbsp ghee (sub butter or avocado oil)
3 cups shredded cheese of choice (i used a 4 cheese mexican blend)
Prepare the quesadillas:
Preheat the oven to 200* F.
Heat a large skillet over medium heat, adding 1 tbsp of avocado oil.
When the oil shimmers, add the chorizo.
Brown the chorizo, breaking it up into smaller pieces with a wooden spoon.
When the chorizo is mostly cooked, add in the sliced mini sweet bell peppers.
Meanwhile, heat a separate frying pan (slightly larger than your tortillas) over medium heat, adding ½ tbsp of ghee to coat the pan.
Place a single tortilla in the middle of the pan and spread a thin layer of shredded cheese in the center, leaving a small border around the edge.
Place a lid over the pan to keep the heat in and melt the cheese.
When the cheese gets gooey, scoop about a ¼ cup of the chorizo bell pepper mixture onto one side of the tortilla, top with a handful of cheese, and return the lid to the pan.
When the rest of the cheese starts to melt, use a metal spatula to gently fold the cheese-only side over the chorizo side.
Allow the cheese to melt for a few more seconds then transfer to an oven safe dish and place in the preheated oven to keep warm and continue melting the cheese.
Repeat steps 7-11 with remaining ingredients.
Best served with smashed avocado and fresh pico de gallo.
*I placed a paper towel under the quesadillas while they warmed in the oven to soak up any excess ghee and keep them crispy!
*I’m picky about my pork- I want humanely raised pigs that are not given hormones or crappy diets! (It’s legal for pigs to be fed literal garbage in many states which is why I try not to buy any pork products at my local grocery store) I get my chorizo from butcherbox and have been very satisfied with the quality and taste. get $50 off your first butcher box here.
