The Dinner Salad

You’ll need:

  • 2 generous cups of arugula

  • 2 carrots, grated or shredded

  • 1/4 red onion, finely chopped

  • 2-3 tbsp feta cheese

  • 1/4 cup extra virgin olive oil

  • 2-3 tbsp apple cider vinegar

  • salt and pepper, to taste


add the arugula, shredded carrot, and chopped onion to a medium-sized salad bowl and use forks or salad tongs to evenly distribute ingredients.

coat with olive oil, salt, and pepper, stirring again to work oil into greens.

add vinegar and feta cheese, serve and enjoy.
