Lavender cardamom pancakes

You’ll need:
1 cup sorghum flour
1 cup vanilla protein powder
2 tbsp baking powder
1 tsp cardamom
1/2 tsp salt
1 1/2 cup ripe banana, mashed
2 eggs
1 1/2 cups milk
1 tsp vanilla extract
2-3 drops lavender essential oil
Line a 13 x 9 pan with parchment paper and preheat the oven to 350.
In a medium bowl, whisk together the flour, protein powder, baking powder, cardamom, and salt.
In a large bowl, beat the banana and egg together until blended; whisk in the milk until combined, then add the vanilla extract and lavender essential oil, stirring to combine.
Fold in the the dry ingredients slowly; there will be some lumps.
Pour the batter into the parchment lined baking pan and place in the oven for 35 minutes or until a toothpick comes out clean from the center.
Allow to cool completely then cut into squares and store for breakfast; can be eaten cold or reheated.
