You’ll need:

  • 1 shallot, finely chopped

  • ½ jalapeno pepper, finely chopped

  • ¼ cup cherry tomatoes, quartered

  • ½ cup cilantro, roughly chopped

  • Juice of 1 lime

  • Salt to taste


Prepare the pico:

  1. Place all ingredients in a small mixing bowl and stir to combine. 

  2. Refrigerate until ready to serve.
