Herby Greek Meatballs

You’ll need:

  • 1 lb. ground beef

  • 1 lb. ground lamb

  • 1 small onion, finely chopped

  • 2-3 garlic cloves, finely chopped

  • 1.5 tbsp fresh mint, finely chopped

  • 1. 5 tbsp fresh parsley, finely chopped

  • 1.5 tbsp fresh dill, finely chopped

  • 1 tsp ground oregano

  • 1 tsp ground coriander

  • 1 tsp ground cumin

  • 1 tsp salt

  • 1 tsp black pepper

  • 2 eggs

  • 1 cup sourdough breadcrumbs


Prepare the meatballs:

  1. Preheat the oven to 415* F.
    Prepare 2 large baking sheets with parchment paper. 

  2. Combine all ingredients in a large mixing bowl. 

  3. Use your hands to thoroughly mix ingredients together. 

  4. Shape about 1.5 tbsp of meatball mixture into balls, spacing them apart on the baking sheet; yields about 2 dozen large meatballs. 

  5. Place in oven and bake for 25 minutes. 

  6. Remove from oven, flip, and bake for another 15 minutes. 

Best served with saffron rice and fresh tzatziki.
