Beef & Kimchi Bowl

You’ll need:

  • 2 tbsp tallow

  • 1 lb. ground beef

  • 2-4 garlic cloves, minced

  • 1 tsp ground ginger

  • 1/2 tsp red pepper flakes

  • 1 cup dry white rice

  • 2 cups dark leafy greens

  • 2 Persian cucumbers, thinly sliced

  • 1/2 cup kimchi

  • 1 tbsp tamari

  • 1/2 tbsp sesame seeds, optional


prepare rice according to package directions.

heat a large skillet over medium-high heat with 2 tbsp tallow. add in the ground beef, allowing the bottom to brown. Then use a spatula to break it apart, allowing it to brown a bit more then breaking it apart until almost cooked through.

When the beef is 75% cooked, add in your spices: garlic, ginger, and crushed red pepper, stirring to combine. Turn off heat.

When the rice is done cooking, remove from heat and allow to cool a bit.

Prepare your bowls, dividing the greens evenly between two bowls. Then layer in the cooked ingredients: beef and rice. Top with cucumbers, kimchi, tamari, and sesame seeds.

Preserve leftover beef and rice for leftovers.
