Homestyle Bruschetta

You’ll need:
1 pint grape or cherry tomatoes, quartered
handful fresh basil, roughly chopped
4-5 garlic cloves, finely minced
3-5 tbsp extra virgin olive oil
salt and pepper, to taste
1 tbsp balsamic vinegar (more to taste)
mozzarella, optional to serve
Prepare the bruschetta:
heat a small pan over medium-low heat with about 1 tbsp of olive oil; add the garlic, cooking on low and stirring occasionally to prevent burning until it is soft and fragrant, about 5-7 minutes; remove from heat and set aside to cool
add the quartered tomatoes and chopped basil to a medium-sized mixing bowl; add 2-3 tbsp olive oil, salt, and pepper to taste; stir to coat the tomatoes
once cooled, pour the garlic and oil mixture into the bowl, stirring to combine
add the balsamic vinegar; stir, taste, and season with more salt and pepper if needed
cover the bowl and set aside to let the flavors meld together
serve alone or over sliced mozzarella and enjoy!

i’ve been making this recipe for years now. I can’t remember where I first found it or what the original measurements were- I eyeball it every time.
one thing that doesn’t change is that everyone always loves this tomato salad! the flavor is ~chef’s kiss~ a perfect addition to any family bbq or Italian spread.
