Salmon, Asparagus, & Wild Rice

You’ll need:

  • 2 4-oz. salmon filets

  • 1 1/2 tbsp avocado oil, divided

  • zest of 1 lemon

  • 1 lemon, thinly sliced

  • 1/2 tsp red chili flakes

  • salt and pepper, to taste

  • 1 bundle of asparagus

  • 1/2 tsp garlic powder

  • wild rice, prepared according to package


Preheat oven to 350 and Line a baking sheet with parchment paper. arrange the lemon slices closely together then lay the salmon filets on top. Coat with oil then season with lemon zest, red chili pepper flakes, salt, and pepper.

Snap the woody ends off the asparagus and rinse. Line a second baking sheet with parchment paper. Arrange the asparagus on the baking sheet and drizzle with oil. Sprinkle with garlic powder, salt, and pepper, shaking the pan to coat.

Place both pans in the oven and bake for about 12 minutes or until desired doneness is reached

Serve over wild rice.
