You’ll need:

  • 2 small apples, cored and roughly chopped

  • 2 small onions, roughly chopped

  • 2 lemons, sliced 1/2” inch thick

  • 1 cup chicken broth

  • 1 turkey hindquarters (could also use turkey breast)

  • salt and pepper, to taste

  • 1/2 tbsp dried sage

  • 1/2 tbsp paprika

  • 1-2 tbsp melted butter

  • 1 tsp worcestershire sauce*


Preheat the oven to 400 degrees and line a baking dish with parchment paper or use a cast iron pan.

Arrange apples, onions, and lemons in a bed on the bottom of the pan. place hindquarters on top, skin side up. drizzle with butter, salt, pepper, dried sage, and paprika. massage in thoroughly. pour chicken broth into base of pan

Place in oven and roast until internal temperature reaches 155 degrees, about 1 hour. remove from oven and let rest for 30 minutes.

Meanwhile, discard the lemon slices and sage sprigs from the pan, straining the juices and transferring the chopped onions and apples to a saucepan, reserving the juices. add 1/2 cup juices to the saucepan and blend with an immersion blender or hand mixer until it reaches a gravy consistency. turn on heat to medium-low, add worcestershire sauce and simmer until lightly bubbling.

serve with autumn mash or roasted root vegetables and enjoy.
