Baked Chicken Quesadillas

You’ll need:

  • 8 small corn tortillas

  • 1 1/2 cups cooked shredded chicken

  • 2 cups cheese of choice, shredded


Preheat your oven to 400 and line a large cookie sheet with unbleached parchment paper.

Place 4 tortillas on the pan separately and toast in the oven for 1-2 minutes per side.

Remove from oven, layering each side with cheese to the edges, then adding a layer of chicken to 2 tortillas.

Return to oven for about 3 minutes or until cheese is warm and gooey. Remove from oven and stack cheese-only side on top of the chicken.

Return to oven for about 5 minutes or until desired crispiness is reached

Repeat with remaining 4 tortillas and serve with beans, bell pepper pico, avocado, and hot sauce.
