Pulled BBQ Chicken Bowls

You’ll need:
chicken:
1 1/2 cups cooked shredded chicken
3/4 cup BBQ sauce
slaw:
3 cups mixed shredded cabbage
3 tbsp extra virgin olive oil
1/4 cup apple cider vinegar
2 tsp stone ground or dijon mustard
1 tsp honey
salt and pepper, to taste
bowl base:
3 cups mixed greens
1 cup cooked rice
green onions, optional for serving
make the slaw:
in a small bowl, whisk together oil, vinegar, mustard, and honey. Place cabbage mix in a larger bowl and pour dressing over it. stir to combine and season with salt and pepper to taste; set aside.
heat the chicken:
Place shredded chicken & BBQ sauce in a medium saucepan over low-medium heat, stirring to coat chicken in sauce
Prepare your bowls:
separate greens and rice between two bowls to make your base. layer with slaw and BBQ chicken. Top with green onions if desired.
