Balsamic Glazed Steak Tips & Mushrooms

You’ll need:

For the steak:

  • 1 1/2 lbs. steak tips, flank steak, or stew beef, trimmed into 1” pieces

  • 1/4 cup tamari

  • 2 tbsp balsamic vinegar

  • 1 tbsp honey

  • 1 tsp dijon mustard

  • 1/2 tsp salt

  • 1/4 tsp ground pepper

  • 2 tbsp tallow

for the mushrooms:

  • 2 tbsp tallow, if needed

  • 1 lb cremini mushrooms, sliced

  • 2 tbsp balsamic vinegar

  • 2 tbsp butter

  • chopped parsley, to garnish


Marinate the steak:

Place steak in a ziplock bag or sealable container and set aside.

In a small bowl, whisk together the remaining ingredients, save the tallow, until the honey is dissolved.

Pour over the steak, seal the bag, and shake to coat evenly with marinade. refrigerate for minimum 1 hour; up to 4 hours.

Cook the steak:

Heat a large pan with the tallow over medium-high until it shimmers.

Add the steak to the pan in a single layer, discarding marinade. sear on all sides and cook until a minimum internal temp of 120 (med/rare) or maximum internal temp of 140 (med/well), about 5-7 minutes. remove from pan, cover, and set aside.

Cook the mushrooms:

Add the mushrooms to the same pan, lowering the heat to medium, stirring occasionally until tender, about 5 minutes, adding more tallow if needed.

Add the vinegar, simmering 1 more minute.

Remove from heat and stir in the butter until a glossy sauce forms. season with salt & pepper as needed.

serve mushrooms over steak with autumn mash or roasted root vegetables.
