Caramelized Onion, Apple, & Sausage Pasta

You’ll need:

  • 4 yellow onions, finely diced

  • 1 apple, finely diced

  • 4 garlic cloves, minced

  • 1 bunch fresh parsley, chopped

  • 1 cup grated parmesan cheese

  • 2 tbsp avocado oil

  • 1 lb. sweet or spicy Italian sausage

  • 4 tbsp butter

  • 1 tsp dried thyme

  • 1/4 tsp red pepper flakes

  • 1 tsp salt

  • 1 lb. dry pasta, orecchiette or similar

  • 1 cup chicken broth


Heat 2 tbsp avocado oil in a large soup pot over medium heat until shimmering. remove sausage casings if necessary, then add sausage to the pot. cook, breaking meat up with a wooden spoon until well-browned, about 8-10 minutes. use a slotted spoon to transfer sausage to a bowl. drain juices from the pot, if necessary.

Add the butter to the pot and reduce heat to medium-low; when melted, add the onion, apples, thyme, salt, and pepper; cook stirring often to prevent burning until the onions and apples are very soft and caramelized, about 25-30 minutes.

While the onions and apples cook, prepare the pasta:

  • Bring a pot of salted water to a boil and cook pasta just shy of al dente (about 2 minutes less than package directions)

  • Drain the pasta reserving 1 cup cooking water

When the onions are ready, add the garlic, cooking until just fragrant, about 1 minute. add the broth and cook until evaporated, about 5 minutes.

Add the pasta and 1/2 cup reserved pasta water to the onion mixture, stirring to combine. add more water if needed.

Remove from heat, stir in the sausage, and half the parsley and parmesan.

Serve garnished with remaining parsley & parmesan.
