Cabbage & White Bean Soup

You’ll need:

  • 1 yellow onion, chopped

  • 2 carrots, chopped

  • 1 small fennel bulb, cored and chopped

  • 2 cloves garlic, minced

  • 2 tbsp butter or tallow

  • salt, to taste

  • 1/4 cup tomato paste

  • 6 cups chicken or vegetable broth

  • 1 small green cabbage, cored and shredded

  • parmesan cheese rind, optional

  • 1 can white beans, drained

  • 1 1/2 cups shredded chicken

  • 1 tbsp fresh thyme or 1 tsp dried

  • 1 tsp red pepper flakes

  • black pepper, to taste


Heat the butter or tallow in a large soup pot over medium heat until shimmering; add the onion, carrots, fennel & garlic with a pinch of salt; cook, stirring occasionally until very soft, about 10 minutes

Increase heat to medium-high & add the tomato paste; cook, stirring continuously, until the mixture sizzles, about 1 minute

Stir in the broth & bring to a simmer over medium heat; stir in the cabbage & more salt; add the parmesan rind, if using; ; simmer until cabbage is very soft, about 25 minutes; remove parmesan rind

Add the beans, chicken, thyme, red, & black pepper; stir to combine & simmer until heated through, about 5-10 minutes
