We eat a Mexican-inspired meal at least once a week in my house. Whether it's taco bowls, fajitas, quesadillas, or chorizo breakfast bowls, these dishes are always a hit. Typically, I make a fresh pico de gallo or a simple guacamole to go with them, but recently I craved something a bit creamier and thought of an avocado crema. Inspired by the success of my basil and carrot top pesto, I decided to try a new combination: cilantro and carrot tops. The result? An incredibly flavorful and creamy avocado crema that exceeded my expectations!

This crema was the perfect addition to my chorizo breakfast bowl, which featured seasoned and roasted new potatoes, onions, and savory ground chorizo, all topped with a runny fried egg. The rich, creamy texture of the crema blended beautifully with the spices and savory flavors of the bowl, creating a delightful harmony of tastes and textures. It truly felt like a “breakfast for dinner” heaven, adding just the right amount of freshness and zing to each bite.

What I love about this avocado crema is its versatility. It’s not only fantastic on breakfast bowls but also pairs wonderfully with tacos, grilled chicken, or even as a dip for fresh veggies or tortilla chips. The combination of cilantro and carrot tops brings a fresh, herbal note that complements the creamy avocado, while Greek yogurt as the base gives it a tangy twist and an extra boost of protein. It’s a healthier, more nutrient-dense alternative to traditional sour cream or mayonnaise-based sauces, making it a perfect addition to any meal.

Plus, this crema is easy to make and keeps well in the fridge for several days. So, you can prep it ahead of time and have it on hand to elevate your meals throughout the week. If you’re looking to switch up your usual Mexican-inspired sides, give this cilantro and carrot top avocado crema a try. It’s a delicious way to add a burst of flavor and nutrition to your plate!
