Tempeh Scramble

You’ll need:

  • 1/2 package tempeh, crumbled

  • 2 tbsp avocado oil

  • 1/2 bell pepper, diced

  • 1/4 onion, finely chopped

  • 1/2 tsp ground turmeric

  • salt and pepper, to taste

  • 1 green onion, thinly sliced

  • hot sauce, optional for serving


Heat a skillet over medium heat, adding 1 tbsp oil.

When it shimmers, add in the peppers, stirring to coat. Cook until they start to soften, about 3-4 minutes.

Add the onion, stir, and cook until is softens and starts to brown.

Add remaining oil if needed, then stir in the crumbled tempeh.

Heat through and season with turmeric, salt, and pepper.

When vegetables reach desired tenderness, remove from heat, plate and garnish with chopped green onion and hot sauce, if desired.
