Breakfast Chili

You’ll need:
2 tbsp butter or tallow
1 medium onion, diced
1 red bell pepper, diced
4 garlic cloves, minced
2 tsp paprika
1 tsp cumin
1/2 tsp chilli powder
1/2 tsp turmeric
1 28 oz can crushed tomatoes
2 cans beans of choice
2 eggs per serving
1/4 cup cilantro, chopped and reserved for serving
Heat butter or tallow in a large pan over medium heat. When it shimmers, add the onion and bell pepper, cooking for 5 minutes or until onion becomes translucent.
Add the garlic & spices, stirring to coat the onion & pepper for 1 minute or until fragrant.
Pour in the canned tomatoes with juice, breaking them down with a large wooden spoon.
Add the beans and simmer for about 10 minutes.
Remove from heat and allow to cool before, dividing between containers and storing in the fridge.
For breakfast, heat a smaller pan over medium heat and add one portion (about 1 cup of the chili). When it starts to simmer make 2 wells in the chili, crack 2 eggs into the pan, cover, and cook to desired doneness.
Enjoy topped with chopped cilantro.
